These mini Caprese skewers are a quick, fresh, and addictive appetizer featuring mozzarella balls, cherry tomatoes, fresh basil, and a homemade balsamic glaze. Perfect for any occasion, they combine simple ingredients with bold flavor and minimal fuss.

Ingredients

Scale
  • 8 ounces (225g) mini mozzarella balls (bocconcini)
  • 1 pint (about 300g) cherry tomatoes
  • About 20 fresh basil leaves
  • ½ cup (120ml) balsamic vinegar
  • 1 tablespoon (12g) brown sugar
  • 1 tablespoon (15ml) extra virgin olive oil (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • About 20 wooden or bamboo skewers

Instructions

  1. Prepare the balsamic glaze: Pour ½ cup (120ml) balsamic vinegar and 1 tablespoon (12g) brown sugar into a small saucepan. Heat over medium-low heat, stirring occasionally until sugar dissolves. Let simmer gently for 10-15 minutes or until thickened and coats the back of a spoon. Remove from heat and allow to cool.
  2. Rinse and dry cherry tomatoes and fresh basil leaves thoroughly to avoid watery skewers.
  3. Assemble the skewers by threading a cherry tomato first, then a basil leaf (folded if large), followed by a mini mozzarella ball. Repeat until all skewers are assembled.
  4. Lightly sprinkle salt and freshly ground black pepper over the skewers. Optionally, toss mozzarella and tomatoes in a little olive oil before skewering for extra richness.
  5. Just before serving, drizzle the homemade balsamic glaze over the skewers, starting with about a teaspoon per 5 skewers and adjusting to taste.
  6. Optionally, drizzle a tiny bit of extra virgin olive oil over the skewers and garnish with extra basil leaves.

Notes

Use fresh, firm mini mozzarella balls for best texture. Dry tomatoes and basil thoroughly to prevent watery skewers. Simmer balsamic glaze gently on low heat to avoid burning. Assemble skewers ahead but add glaze just before serving to keep fresh. Balsamic glaze can be stored in an airtight container in the fridge for up to a week.
