  • 1/3 cup (75g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • Optional mix-ins: 1/2 cup (75g) chopped walnuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth but still a bit chunky.
  3. Add melted unsalted butter, egg, and vanilla extract to the mashed bananas and stir gently until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, granulated sugar, brown sugar, and cinnamon (if using).
  5. Add the dry ingredients to the wet banana mixture in batches, folding gently with a spatula until just combined. Do not overmix.
  6. Fold in any optional mix-ins like walnuts, chocolate chips, or dried fruit if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 55 minutes.
  9. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

If the top browns too quickly, tent the bread with foil midway through baking. Letting the batter rest for 5 minutes before baking helps with even rising. Avoid overmixing to keep the crumb tender. Cool completely before slicing to prevent crumbling. Frozen bananas can be used if thawed and drained. For muffins, reduce baking time to 18-22 minutes.
