Easy No-Bake Patriotic Strawberry Blueberry Cheesecake Trifle

A quick and easy no-bake cheesecake trifle layered with creamy cheesecake filling, fresh strawberries and blueberries, and a crunchy graham cracker crust. Perfect for 4th of July celebrations and summer gatherings.

  • 1 ½ cups graham crackers, crushed (about 150g)
  • 6 tablespoons unsalted butter, melted (about 85g)
  • 8 ounces cream cheese, softened (about 225g)
  • ¾ cup powdered sugar (about 90g)
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold (240ml)
  • 1 ½ cups fresh strawberries, hulled and sliced (about 225g)
  • 1 cup fresh blueberries (about 150g)
  • 2 tablespoons granulated sugar (optional, about 25g)

Instructions

  1. Crush 1 ½ cups of graham crackers until fine crumbs form. Mix with 6 tablespoons melted unsalted butter in a medium bowl until evenly moistened. Press a thin layer into the bottom of your trifle dish or divide evenly into individual cups. Chill in the fridge while you make the filling (about 10 minutes).
  2. In a medium bowl, combine 1 ½ cups sliced strawberries and 1 cup blueberries. Sprinkle with 2 tablespoons granulated sugar, toss gently, and let sit for 10-15 minutes to release natural juices without making them soggy.
  3. In a large bowl, beat 8 ounces softened cream cheese with ¾ cup powdered sugar and 1 teaspoon vanilla extract until smooth and creamy.
  4. In a separate chilled bowl, whip 1 cup heavy cream until stiff peaks form. Fold the whipped cream gently into the cream cheese mixture until fully combined but still airy.
  5. Spread a generous layer of cheesecake filling over the graham cracker crust in your dish. Add a layer of macerated strawberries, then a layer of blueberries. Repeat the layers until ingredients are used, finishing with a layer of berries on top.
  6. Cover the assembled trifle tightly with plastic wrap and refrigerate for at least 2 hours, ideally 4, to let the flavors meld and the crumbs soften slightly.
  7. Before serving, garnish with a few whole berries or a sprig of mint if desired.

Notes

Keep berries dry and toss lightly with sugar to avoid soggy layers. Whip heavy cream to stiff peaks for a light, fluffy filling. Chill the assembled trifle for at least 2 hours, ideally 4, for best flavor melding. Prepare crust and filling a day ahead and assemble with berries just before serving to keep fruit fresh. For dairy-free, use coconut cream and dairy-free cream cheese. For gluten-free, substitute graham crackers with gluten-free crumbs or almond flour.
