Quick and easy no-bake energy balls made with peanut butter, oats, honey, and mini chocolate chips. Perfect for a healthy snack on the go with a chewy, soft texture and balanced sweetness.

Ingredients

  • 1 ½ cups (135g) rolled oats
  • 1 cup (250g) creamy peanut butter
  • ⅓ cup (113g) honey
  • ½ cup (90g) mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional add-ins: ¼ cup chopped nuts, chia seeds, shredded coconut, fresh or dried berries

Instructions

  1. Gather and measure your ingredients precisely.
  2. In a large mixing bowl, combine the peanut butter and honey. Stir until smooth and creamy, warming slightly if needed.
  3. Add the vanilla extract and salt, mixing well.
  4. Stir in the rolled oats and ground flaxseed until the mixture is evenly coated and slightly sticky.
  5. Fold in the mini chocolate chips gently.
  6. Dampen your hands slightly with water if the mixture is too sticky, then scoop about 1 tablespoon (15g) and roll into balls.
  7. Place the balls on a baking sheet or plate lined with parchment paper.
  8. Chill in the refrigerator for at least 30 minutes to firm up.
  9. Transfer the chilled energy balls to an airtight container and store in the fridge for up to a week or freeze for longer storage.
  10. Enjoy as a quick snack on the go.

Notes

If the mixture crumbles or doesn’t stick well, add more peanut butter or honey a teaspoon at a time. Use natural peanut butter and warm slightly if thick. Chill for at least 30 minutes to firm up. Optional add-ins can alter texture and shelf life.
