  • Pinch of sea salt

Instructions

  1. Combine the wet ingredients first. In a large mixing bowl, add 1 cup creamy peanut butter, ⅓ cup honey, and ½ teaspoon vanilla extract. Stir together with a rubber spatula or wooden spoon until smooth and well combined.
  2. Add the dry ingredients. To the same bowl, add 1 cup old-fashioned rolled oats, ½ cup chocolate protein powder, 1 tablespoon ground flaxseed (if using), and a pinch of sea salt. Stir until fully incorporated.
  3. Mix with your hands. Once the spatula can’t do much more, wash your hands and dive in. Squeeze the mixture through your fingers, pressing and folding until everything is evenly distributed. The texture should feel like thick, slightly sticky dough. Adjust with extra honey or oats if needed.
  4. Fold in the chocolate chips. Add ¼ cup mini chocolate chips and gently fold them into the mixture with your hands, being careful not to melt them.
  5. Roll into balls. Scoop out about 1 tablespoon of the mixture and roll between your palms to form a smooth ball. Place each ball on a parchment-lined baking sheet or plate.
  6. Chill for at least 30 minutes. Place the baking sheet in the refrigerator and chill uncovered for at least 30 minutes to firm up.
  7. Transfer to storage. After chilling, transfer the protein balls to an airtight container. Store in the refrigerator for up to 2 weeks, or freeze for longer storage.

Notes

If the mixture is too dry, add an extra tablespoon of honey or peanut butter. If too sticky, add a tablespoon of oats. Chilling is crucial for the balls to hold their shape. For best flavor, let them sit in the fridge for a day before eating.
