Easy No-Mixer Chocolate Chip Cookie Skillet for Two

A warm, gooey chocolate chip cookie skillet for two that’s ready in 20 minutes with no mixer required. Perfect for a cozy date night or a quick dessert indulgence.

Ingredients

  • 4 tablespoons unsalted butter, melted and slightly cooled
  • ¼ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 large egg yolk, room temperature
  • ½ teaspoon vanilla extract
  • ¾ cup all-purpose flour, spooned and leveled
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup semi-sweet chocolate chips, plus extra for topping
  • Flaky sea salt for finishing (optional)
  • Vanilla ice cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 5-inch cast iron skillet in the oven while it preheats.
  2. Melt the 4 tablespoons of unsalted butter in a small saucepan over low heat, or in the microwave in 15-second bursts. Let it cool for about 2 minutes.
  3. In a medium mixing bowl, combine the melted butter with ¼ cup granulated sugar and ¼ cup packed light brown sugar. Stir until well combined.
  4. Add the room-temperature egg yolk and ½ teaspoon vanilla extract. Stir until smooth and glossy.
  5. Sprinkle ¾ cup all-purpose flour, ¼ teaspoon baking soda, and ¼ teaspoon salt over the wet mixture. Stir gently until just combined. Fold in ⅓ cup semi-sweet chocolate chips. Reserve a few chips to press on top later.
  6. Carefully remove the hot skillet from the oven using oven mitts. Spray it lightly with non-stick spray or rub it with a tiny bit of butter. Press the cookie dough evenly into the skillet. Press the reserved chocolate chips into the top of the dough.
  7. Bake for 12 to 15 minutes. At 12 minutes, the edges should be golden and the center should look slightly underdone and puffy.
  8. Let the skillet cool on a wire rack for 5 minutes. Sprinkle with flaky sea salt if desired. Serve warm with a scoop of vanilla ice cream and two spoons.

Notes

For a gooey center, bake for 12 minutes. For a more set cookie, bake for 15 minutes. Let the butter cool before adding the egg yolk to avoid scrambling. Use a kitchen scale for accuracy: ¾ cup all-purpose flour is about 90 grams.
