  • 1/2 cup (120g) sunflower butter
  • 1/3 cup (113g) honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup (35g) hulled sunflower seeds
  • 1/4 cup (40g) mini chocolate chips or dried fruit (optional)

Instructions

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving some overhang on the sides.
  2. In a large mixing bowl, combine sunflower butter, honey, and vanilla extract. Stir until smooth and fully combined.
  3. Add rolled oats, salt, ground cinnamon, hulled sunflower seeds, and optional mini chocolate chips or dried fruit. Stir gently until all ingredients are coated.
  4. Transfer the mixture to the lined pan and press firmly and evenly using a spatula or clean hands.
  5. Refrigerate for at least 2 hours until bars are firm to the touch.
  6. Lift the mixture out using the parchment overhang and cut into 10 to 12 bars with a sharp knife.
  7. Store bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

Warm sunflower butter slightly if thick to ease mixing. Press mixture firmly and evenly to prevent crumbling. Chill bars for at least 2 hours before cutting. Store refrigerated to maintain texture. Use certified gluten-free oats for gluten-free version. Optional add-ins include mini chocolate chips or dried fruit.
