This easy overnight cinnamon roll breakfast casserole is the ultimate shortcut to a special breakfast. Prep it in 10 minutes the night before, then just pop it in the oven in the morning for a soft, pull-apart casserole with a caramelized, creamy bottom.

  • 4 large eggs, at room temperature
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into 4 equal pieces using a sharp knife or kitchen shears.
  3. Scatter the cut cinnamon roll pieces evenly in the prepared baking dish.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, vanilla extract, and ground cinnamon until smooth and pale yellow.
  5. Slowly and evenly pour the custard mixture over the cinnamon roll pieces. Gently press down on the rolls with a spatula to help them absorb the liquid.
  6. Drizzle the melted butter evenly over the top of the casserole.
  7. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours, or up to 24 hours.
  8. The next morning, remove the casserole from the refrigerator and let it sit at room temperature for 20 minutes. Preheat the oven to 350°F (175°C).
  9. Remove the plastic wrap and bake for 30-35 minutes, until puffed up, golden brown, and set in the center. If the top browns too quickly, tent with foil for the last 10 minutes.
  10. Let the casserole cool for 5-10 minutes, then squeeze the reserved icing packets over the top. Serve immediately.

Do not skip the overnight rest; it is crucial for the texture. Use room temperature eggs to prevent the custard from becoming lumpy. If adding nuts, sprinkle them on top just before baking to keep them crunchy. For a dairy-free version, try full-fat canned coconut cream and dairy-free milk, but the texture will differ.
