This overnight cinnamon roll casserole is a shortcut breakfast that tastes like you spent hours in the kitchen. Canned cinnamon rolls are soaked in a creamy custard overnight, then baked until golden and topped with a luscious cream cheese glaze.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 1/2 cup heavy cream
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup unsalted butter, melted
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon vanilla extract
  • 2–3 tablespoons milk

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray. Open both cans of cinnamon rolls and separate them. Cut each roll into quarters and scatter evenly in the dish.
  2. In a large mixing bowl, whisk together heavy cream, eggs, vanilla extract, and ground cinnamon until smooth and slightly frothy. Pour evenly over the cinnamon roll pieces, pressing down gently with a spatula to coat.
  3. Melt the butter and drizzle over the top of the casserole.
  4. Cover tightly with plastic wrap or aluminum foil and refrigerate for 8-12 hours (overnight).
  5. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit for 15 minutes while oven heats. Bake uncovered for 30-35 minutes, until top is golden brown and center is set. Tent with foil if browning too fast.
  6. While casserole bakes, make the glaze: In a medium bowl, beat softened cream cheese and butter until smooth. Add powdered sugar, vanilla, and 2 tablespoons milk. Beat until creamy. Add more milk if too thick, or more powdered sugar if too thin.
  7. Let casserole cool for 5-10 minutes. Drizzle cream cheese glaze generously over the top. Serve warm.

Notes

Don’t skip the overnight soak—the rolls need at least 8 hours to absorb the cream mixture. Cut rolls into quarters for best texture. Let casserole rest 5-10 minutes before glazing to prevent glaze from melting. Double the glaze if desired. For dairy-free, use full-fat canned coconut milk and dairy-free cream cheese and butter.
