A cozy and indulgent breakfast casserole combining frozen cinnamon rolls soaked overnight in a rich custard and baked to golden perfection, topped with a creamy cream cheese glaze.

Ingredients

Scale
  • 1 package frozen cinnamon rolls (about 8 rolls)
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar (50 grams)
  • Pinch of salt
  • 4 oz cream cheese, softened (115 grams)
  • 1 cup powdered sugar (120 grams)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Remove the frozen cinnamon rolls from their packaging and cut each into quarters or halves so they fit nicely in your baking dish. (5 minutes)
  2. Spread the cut cinnamon rolls evenly in a 9×13-inch baking dish. (2 minutes)
  3. In a large mixing bowl, whisk together eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, brown sugar, and salt until fully combined and smooth. (5 minutes)
  4. Slowly pour the custard mixture over the arranged cinnamon rolls, gently pressing down slightly with a spatula to encourage soaking. Make sure all pieces get coated. (3 minutes)
  5. Cover the baking dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight. (Active time: 1 min, resting time: overnight)
  6. Preheat oven to 350°F (175°C). Remove the dish from the fridge while the oven warms up. (10 minutes)
  7. Bake uncovered for 40-45 minutes, until the custard is set and the top is golden brown. (40-45 minutes)
  8. While baking, beat together softened cream cheese, powdered sugar, and milk until smooth and drizzle-able. Adjust milk to preferred consistency. (5 minutes)
  9. Remove from oven and let cool for 5 minutes. Drizzle generously with cream cheese glaze and serve warm. (5 minutes)

Notes

Do not skip the overnight soak for best custardy texture. Use room temperature eggs and softened cream cheese for smooth blending. Tent with foil if top browns too fast. Let rest before serving for cleaner slices. Can soak for minimum 6 hours if short on time.
