Easy Patriotic Berry Trifle: Best 4th of July Dessert

A no-bake, crowd-pleasing dessert featuring layers of angel food cake, fresh strawberries and blueberries, vanilla pudding, and whipped cream. Perfect for summer celebrations and can be made ahead.

  • 1 store-bought angel food cake (about 16 ounces), cut into 1-inch cubes
  • 2 pounds fresh strawberries, hulled and sliced
  • 1 pint fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 2 packages (3.4 ounces each) instant vanilla pudding mix
  • 3 cups cold whole milk
  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Maceration the berries: In a large bowl, combine sliced strawberries with 1/4 cup granulated sugar and 1 tablespoon lemon juice. Toss gently and let sit for 15-20 minutes. In a separate small bowl, toss blueberries with a pinch of sugar and set aside.
  2. Make the pudding: In a medium bowl, whisk together both packages of instant vanilla pudding mix with 3 cups cold whole milk for about 2 minutes until thickened. Let sit for 5 minutes.
  3. Whip the cream: In a chilled large bowl, beat 2 cups heavy whipping cream with 3 tablespoons powdered sugar and 1 teaspoon vanilla extract on medium-high speed until soft peaks form, about 3-4 minutes.
  4. Fold it together: Fold one-third of the whipped cream into the pudding mixture, then gently fold in the remaining whipped cream until no white streaks remain.
  5. Cube the cake: Cut the angel food cake into 1-inch cubes.
  6. Build the first layer: Spread a thin layer (about 1 cup) of cream mixture on the bottom of a trifle dish. Arrange one-third of the cake cubes on top.
  7. Add the berry layer: Spoon one-third of the macerated strawberries over the cake, drizzle about 2 tablespoons of strawberry syrup, and scatter one-third of the blueberries.
  8. Repeat the layers: Spread one-third of the remaining cream mixture over the berries. Add another layer of cake cubes, then another layer of strawberries and blueberries with syrup. Repeat one more time, ending with a final layer of cream on top.
  9. Top it off: Finish with remaining cream mixture. Arrange reserved strawberries and blueberries on top decoratively. Optionally, add fresh mint leaves.
  10. Chill: Cover loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Notes

Don’t skip the maceration step; it’s essential for flavor. Whip cream to soft peaks, not stiff. Layer in the order specified for best results. Let the trifle rest overnight for optimal flavor and texture. Keep blueberries separate until assembly to prevent color bleeding.
