Instructions

  1. Prepare the graham cracker crust: In a medium bowl, combine 1 1/2 cups (150g) crushed graham crackers with 6 tablespoons (85g) melted unsalted butter. Mix until crumbs are evenly coated and clump together slightly. Set aside.
  2. Make the cheesecake filling: Using an electric mixer, beat 16 ounces (450g) softened cream cheese in a large bowl until smooth and creamy, about 2–3 minutes. Gradually add 3/4 cup (90g) powdered sugar and 1 teaspoon vanilla extract, mixing until fully blended.
  3. Whip the heavy cream: In a separate chilled bowl, whip 1 cup (240ml) cold heavy cream to stiff peaks, about 3–4 minutes on medium-high speed.
  4. Fold whipped cream into cream cheese mixture: Gently fold the whipped cream into the cream cheese mix using a spatula, preserving the light, airy texture without deflating it.
  5. Prepare the berries: Rinse and dry 1 cup each of fresh strawberries and blueberries. Slice the strawberries thinly.
  6. Assemble the parfait cups: Start with a layer of graham cracker crust (about 2 tablespoons), then add a generous spoonful of cheesecake filling (about 3 tablespoons). Follow with a layer of strawberries, then repeat the layers ending with blueberries on top. Each cup should have 3–4 layers total.
  7. Optional garnish: Sprinkle a few extra graham cracker crumbs and add a small mint leaf on top.
  8. Chill before serving: Refrigerate the assembled parfait cups for at least 1 hour to allow flavors to meld and filling to set slightly. Best enjoyed within 24 hours.

Soften cream cheese properly before mixing. Whip cream to stiff peaks but avoid overwhipping. Fold whipped cream gently to keep filling airy. Dry berries thoroughly to avoid soggy layers. Chilling improves flavor and texture. Can prepare crust and filling a day ahead. For dairy-free or vegan versions, substitute cream cheese and heavy cream with coconut-based alternatives and use vegan cookies for crust.
