  • 56 medium fresh peaches, peeled, pitted, and sliced (about 4 cups)
  • ½ cup granulated sugar (100g)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • ¾ cup all-purpose flour (90g)
  • 1 cup old-fashioned rolled oats (90g)
  • ½ cup packed brown sugar (110g)
  • 6 tablespoons cold unsalted butter, cut into small cubes (85g)
  • 1 teaspoon vanilla extract
  • Vanilla ice cream, for serving

Instructions

  1. Peel, pit, and slice the peaches to yield about 4 cups. Toss the peach slices with granulated sugar, lemon juice, and ground cinnamon in a mixing bowl. Let rest for 10 minutes to macerate.
  2. In another bowl, combine all-purpose flour, rolled oats, and brown sugar. Cut cold unsalted butter into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse sand. Stir in vanilla extract.
  3. Pour the peach mixture with juices into an 8×8-inch baking dish, spreading evenly. Sprinkle the crisp topping evenly over the peaches.
  4. Bake in a preheated oven at 350°F (175°C) for 35-40 minutes, until the topping is golden brown and the peach filling is bubbly.
  5. Let cool for about 10 minutes before serving. Serve warm with a scoop of vanilla ice cream on top.

Notes

If peaches are not very sweet, add an extra tablespoon of sugar to the filling. Watch the crisp during the last 5 minutes of baking to prevent over-browning; tent with foil if needed. Frozen peaches can be used if thawed and drained well. For gluten-free, substitute all-purpose flour with almond flour or gluten-free baking mix. For vegan, use coconut oil instead of butter and dairy-free vanilla ice cream.
