  • ¼ cup (30g) freeze-dried strawberries or raspberries (or finely chopped dried fruit)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions

  1. Combine dry ingredients: In a medium bowl, mix 1 cup rolled oats, 1 tablespoon chia seeds if using, ¼ cup freeze-dried strawberries, and a pinch of salt until evenly distributed (about 1-2 minutes).
  2. Add wet ingredients: Spoon in ½ cup creamy peanut butter and 2 tablespoons honey. Pour in 1 teaspoon vanilla extract. Fold everything together with a spatula until sticky but holds together. Adjust with more honey or peanut butter if too dry, or more oats if too wet.
  3. Check consistency: Pinch a small amount and roll between fingers to ensure it sticks but is not overly sticky or crumbly. Adjust as needed.
  4. Form the bites: Roll mixture into small balls about 1 inch (2.5 cm) in diameter, yielding roughly 12-14 bites. Wet hands slightly or chill dough for 10 minutes if mixture sticks too much.
  5. Chill to set: Place bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  6. Store and enjoy: Transfer chilled bites to an airtight container. Keep refrigerated up to one week or freeze for longer storage.

Notes

Use natural creamy peanut butter for best texture and less oiliness. Freeze-dried fruit is preferred to keep bites dry and chewy; finely chopped dried fruit or a small dollop of jam inside each bite can be used as alternatives. Chilling for at least 30 minutes is essential for bites to hold shape. Adjust sweetness gradually with honey. For nut-free option, substitute sunflower seed butter and ensure oats are processed in a nut-free facility.
