These easy peanut butter banana overnight oats are the kind of recipe that makes you feel like a genius with absolutely no culinary skill required. It’s the breakfast that doesn’t ask anything of you — no chopping, no stirring over heat, no watching a pot boil.

Ingredients

  • ½ cup (50g) rolled oats
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • ⅔ cup (160ml) milk of choice
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, dark chocolate chips, chopped nuts, cinnamon, Greek yogurt

Instructions

  1. Mash the banana in your jar or a small bowl until mostly smooth with a few tiny lumps remaining.
  2. Add peanut butter, milk, and maple syrup or honey (if using). Stir until peanut butter is fully incorporated.
  3. Add rolled oats, chia seeds, and a pinch of salt. Stir until everything is well combined and all oats are submerged.
  4. Taste and adjust sweetness or salt as desired.
  5. Seal the jar tightly and refrigerate for at least 6 hours, ideally 8-12 hours.
  6. In the morning, stir well. If too thick, add a splash of milk to loosen.
  7. Add toppings and enjoy cold, or let sit for 5 minutes to come to room temperature.

Notes

Use rolled oats, not instant or steel-cut. Mash banana thoroughly for best texture. Stir peanut butter well before measuring. Leave at least an inch of space at the top of the jar as oats expand. Keeps up to 5 days in the fridge. Add toppings just before serving.
