Ingredients

Scale
  • 1 cup cherry tomatoes, halved if large
  • 1 cup fresh strawberries, hulled and halved
  • 46 ounces salami or pepperoni slices, rolled or folded
  • 1 red bell pepper, sliced into thin strips
  • 1 orange bell pepper, sliced
  • 1 cup mango chunks, fresh or thawed frozen
  • 4 ounces sharp cheddar cheese, cubed
  • ½ cup yellow cherry tomatoes
  • 1 cucumber, sliced into rounds
  • 1 cup green grapes, stemmed
  • Small handful fresh basil leaves
  • ½ cup green olives, pitted
  • 1 cup blackberries
  • 1 cup purple grapes
  • ½ cup dried figs, halved
  • 34 ounces blue cheese, crumbled
  • 12 cups assorted crackers
  • ½ cup almonds or walnuts, toasted
  • Honey for drizzling
  • Olive oil for brushing bread or crackers (optional)

Instructions

  1. Prep all ingredients: Wash and dry all produce. Hull strawberries, slice cucumbers into rounds, cube the cheddar, and halve cherry tomatoes. Roll salami slices into little cylinders or fold them into quarters. Arrange everything in separate bowls.
  2. Choose your layout: Place your board on a clean surface. Visualize a rainbow arc starting from the top left corner and curving to the bottom right. Leave space in the center for crackers and bowls.
  3. Place the bowls first: Set small bowls in the center or along the edges for honey, olives, and nuts. This anchors the board and creates natural breaks in the color flow.
  4. Start with the reds: Arrange cherry tomatoes, strawberries, salami rolls, and red bell pepper strips along the top left arc. Group them closely but leave breathing room.
  5. Add oranges and yellows: Moving clockwise, place mango chunks, orange bell pepper, cheddar cubes, and yellow tomatoes. Let them overlap slightly with the reds for a gradient effect.
  6. Fill in the greens: Cucumber rounds, green grapes, basil leaves, and olives go next. Tuck the basil leaves under the cucumber for a layered look.
  7. Finish with blues and purples: Blackberries, purple grapes, dried figs, and blue cheese crumbles complete the rainbow arc. Crumble the blue cheese just before placing.
  8. Fill the center: Pour crackers into the empty center space. Scatter almonds or walnuts around the crackers. Drizzle honey over the cheese or fruit if desired.
  9. Final touches: Step back and look at your board. Adjust any gaps by moving items closer together. Add extra basil leaves or a few more grapes where needed.

Notes

Keep ingredients at room temperature for best flavor. Use the ‘color block’ method for a professional look. Layer for height but don’t overcrowd. Prep everything before you start assembling.
