Instructions

  1. In your largest mixing bowl, combine the Rice Chex cereal, broken pretzel pieces, salted peanuts, and holiday M&Ms. If using crushed candy canes, add them now. Gently toss everything together with your hands so it’s evenly distributed.
  2. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each, until melted and smooth (about 1.5 to 2 minutes total). Stop while there are still a few lumps; the residual heat will melt them as you stir.
  3. Pour the melted white chocolate over the cereal mixture. Use a rubber spatula to gently fold everything together until every piece is coated, working quickly but carefully to avoid crushing the cereal.
  4. Spread the coated mixture onto a parchment-lined baking sheet in a single layer. Let it cool for about 5 minutes.
