  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup water or low-sodium beef broth
  • 1 (13 oz) bag restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese (or mix of sharp cheddar and Monterey Jack)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (4 oz) can diced green chiles, drained (optional)
  • ½ cup pickled jalapeños, drained
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup salsa or pico de gallo
  • 1 large avocado, diced (or guacamole)
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven. If desired, line a large sheet pan with aluminum foil or parchment paper.
  2. Cook the ground beef: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground beef to the skillet. Break it up with a wooden spoon and cook undisturbed for 2-3 minutes to brown, then stir and continue cooking for 4-5 minutes until no pink remains. Drain excess fat, leaving about 1 tablespoon.
  4. Season the beef: Reduce heat to medium. Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef. Stir well. Pour in water or beef broth and simmer for 2-3 minutes until liquid is mostly absorbed. Taste and adjust seasoning if needed. Remove from heat.
  5. Layer the nachos: Spread half of the tortilla chips in an even layer on the prepared sheet pan. Sprinkle half of the seasoned ground beef, half of the black beans, half of the diced green chiles (if using), and half of the shredded cheese over the chips. Repeat with remaining chips, beef, beans, chiles, and cheese.
  6. Scatter pickled jalapeños over the top layer.
  7. Bake for 8-10 minutes, until cheese is fully melted and bubbly and edges of chips are just starting to turn golden brown.
  8. Remove from oven and let cool for 2 minutes. Dollop sour cream and salsa over the top. Scatter diced avocado and fresh cilantro. Squeeze lime wedges over everything. Serve immediately straight from the sheet pan.

Notes

For best results, use thick restaurant-style tortilla chips and shred your own cheese from a block. Drain beans and chiles well to avoid sogginess. Add wet toppings like sour cream and salsa after baking to keep chips crunchy. Leftovers don’t reheat well; store components separately.
