Ingredients

Scale
  • 34 pounds bone-in pork shoulder (pork butt)
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt (kosher salt preferred; reduce to 3/4 teaspoon if using table salt)
  • 1 teaspoon brown sugar
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar (packed)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 810 soft hamburger buns (brioche recommended)
  • Coleslaw (optional, for serving)
  • Pickles (optional, for serving)

Instructions

  1. Make the spice rub: In a small bowl, combine smoked paprika, garlic powder, onion powder, black pepper, salt, and brown sugar. Stir until evenly distributed.
  2. Season the pork shoulder: Pat the pork dry with paper towels. Sprinkle the spice rub all over the meat, massaging it into every surface. Let sit at room temperature for 15 minutes (or refrigerate overnight for deeper flavor).
  3. Mix the BBQ sauce: In a liquid measuring cup or small bowl, whisk together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, yellow mustard, smoked paprika, garlic powder, black pepper, and cayenne (if using). Taste and adjust.
  4. Layer in the slow cooker: Pour about 1/4 cup of the BBQ sauce into the bottom of a 6-quart slow cooker. Place the seasoned pork shoulder on top, fat side up. Pour remaining sauce over and around the pork.
  5. Cook low and slow: Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until fork-tender.
  6. Shred the pork: About 30 minutes before serving, transfer the pork to a cutting board using tongs. Let rest for 5 minutes. Using two forks, shred the meat into bite-sized pieces. Discard any large pieces of fat or bone.
  7. Skim and reduce the sauce: Skim excess fat from the cooking liquid. If sauce is thin, simmer uncovered on HIGH for 10-15 minutes to thicken. Taste and adjust seasoning.
  8. Combine and finish: Return shredded pork to the slow cooker and stir into the sauce. Cook on LOW for another 15-20 minutes. Stir and taste again.
  9. Serve: Pile pulled pork onto soft buns. Top with coleslaw and pickles if desired. Serve immediately.

Notes

Don’t skip the fat on the pork shoulder—it keeps the meat moist. Resist the urge to peek during cooking. Let the pork rest before shredding for juicier results. Taste and adjust the sauce to your preference. For a spicier version, add chipotle peppers in adobo. For a keto-friendly version, use sugar-free BBQ sauce and serve without buns.
