Easy Slow Cooker Buffalo Chicken Dip: Best Party Appetizer

This creamy, spicy, and cheesy buffalo chicken dip is made effortlessly in a slow cooker with simple pantry ingredients. Perfect for game days, parties, or any gathering, it’s always the first bowl to empty.

  • 16 oz cream cheese, softened and cubed
  • 2 cans (12.5 oz each) chunk chicken breast, drained
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 packet (1 oz) dry ranch dressing mix
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup milk or half-and-half
  • 2 tablespoons unsalted butter

Instructions

  1. Spray the inside of your slow cooker with non-stick cooking spray or lightly grease it with butter.
  2. Cut the cream cheese into 1-inch cubes.
  3. Drain both cans of chicken well, pressing against the side of the can with a fork to remove excess liquid. Add chicken to the slow cooker and break it up with a fork or potato masher into small shreds.
  4. Scatter the cubed cream cheese and butter pieces over the shredded chicken.
  5. Pour 1 cup of Frank’s RedHot and the milk or half-and-half evenly over everything.
  6. Sprinkle the entire packet of dry ranch dressing mix over the top.
  7. Add 1 1/2 cups of the shredded cheddar cheese, reserving the remaining 1/2 cup for later.
  8. Cover and cook on low for 2 hours.
  9. After 2 hours, stir everything together until smooth and creamy. If too thick, add a splash more milk; if too thin, leave the lid off for 15-20 minutes.
  10. Sprinkle the reserved 1/2 cup of cheddar and the crumbled blue cheese (if using) over the top. Cover and cook on low for another 15-20 minutes until the cheese is melted and bubbly.
  11. Stir one more time before serving.
  12. Switch the slow cooker to the warm setting and serve directly from the pot.

Notes

For best results, shred your own cheddar cheese from a block to avoid graininess. Start with less liquid and add more as needed. The dip tastes even better the next day as flavors meld. To make ahead, prepare and refrigerate, then reheat in the slow cooker on low for 30 minutes.
