These easy slow cooker buffalo chicken sliders are the perfect game day food—spicy, cheesy, and easy to eat with one hand. The slow cooker does all the work, and the result is perfectly shredded chicken in a thick, clingy buffalo sauce that doesn’t drip everywhere.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts (about 4 medium)
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1 packet ranch dressing mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 12-count package Hawaiian sweet rolls (e.g., King’s Hawaiian)
  • 8 ounces sharp cheddar cheese, shredded
  • ½ cup blue cheese crumbles (optional)
  • 2 tablespoons butter, melted (for brushing rolls)
  • 1 tablespoon everything bagel seasoning (optional)
  • Celery sticks (for serving)
  • Carrot sticks (for serving)
  • Extra ranch or blue cheese dressing (for serving)

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker. Sprinkle garlic powder, onion powder, salt, and pepper evenly over the chicken.
  2. Pour the buffalo wing sauce over the chicken. Drop the butter pieces on top, distributing them evenly. Sprinkle the ranch dressing mix over everything. Give it a gentle stir.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken shreds easily with a fork.
  4. Remove the chicken from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker and stir into the sauce. Let rest for 10-15 minutes.
  5. Preheat the oven to 350°F.
  6. Without separating the individual rolls, slice the entire block of Hawaiian rolls in half horizontally. Place the bottom half in a 9×13 baking dish.
  7. Using a slotted spoon, pile the buffalo chicken mixture onto the bottom half of the rolls. Spread evenly. Sprinkle shredded cheddar cheese over the chicken, followed by blue cheese crumbles (if using). Place the top half of the rolls on top.
  8. Brush the tops of the rolls with melted butter. Sprinkle everything bagel seasoning (if using) over the buttered tops.
  9. Bake for 10-12 minutes, until the cheese is melted and the tops are golden brown.
  10. Let the sliders rest in the pan for 5 minutes before cutting along the individual roll lines. Serve immediately with celery sticks, carrot sticks, and extra ranch or blue cheese dressing.

Notes

Use a slotted spoon to avoid soggy sliders. Toast the bottom half of the rolls for extra crispness. Let the sliders rest for 5 minutes before cutting to help them hold together. For less spice, use mild buffalo sauce or mix with barbecue sauce. For more heat, add extra hot sauce or cayenne.
