  • 2 pounds chicken breasts or thighs
  • 3 medium bell peppers (red, green, and yellow), sliced
  • 1 large yellow onion, sliced
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional toppings: shredded cheese, sour cream, fresh cilantro, sliced avocado, warmed tortillas

Instructions

  1. Slice the bell peppers and onion into thin strips. Mince the garlic cloves. Trim any excess fat from the chicken breasts or thighs.
  2. In a large mixing bowl, combine the chicken pieces with olive oil, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Toss well to coat evenly.
  3. Place sliced onions and half of the peppers at the bottom of the slow cooker. Lay the seasoned chicken over the veggies, then top with remaining peppers and minced garlic.
  4. Pour chicken broth over everything to keep the chicken moist.
  5. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken is tender and easily shredded with a fork.
  6. Once cooked, squeeze fresh lime juice over the chicken and peppers and gently toss to combine.
  7. Serve the chicken fajita mixture in bowls over rice, quinoa, or cauliflower rice. Add desired toppings such as shredded cheese, sour cream, cilantro, or avocado slices.

Notes

Use chicken thighs for juicier meat and keep a close eye on cooking time if using breasts. Avoid overcooking peppers to prevent sogginess. If chicken is dry, stir in a tablespoon of olive oil or splash of broth before serving. Frozen chicken can be used but increase cooking time by about an hour. Optional toppings add creaminess and flavor. Leftovers store well in the fridge for up to 4 days and freeze for up to 3 months.
