  • 2 large bell peppers (any color), cut into 1-inch squares
  • 1 large red onion, cut into 1-inch chunks

  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30ml) honey or 25g brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Soak the skewers (if using wooden ones): Place 8-10 wooden skewers in a dish of water and let them soak for at least 20 minutes. This prevents them from catching fire on the grill. Metal skewers? Skip this step.
  2. Preheat your grill: Fire up your grill to medium-high heat, about 375-400°F (190-200°C). For gas grills, this takes about 10 minutes. For charcoal, wait until the coals are covered with white ash — about 20-25 minutes.
  3. Prepare the ingredients: Cut the smoked sausage into 1-inch thick rounds. You should get about 16-20 pieces per pound. Cut the bell peppers into 1-inch squares — try to keep them uniform so they cook evenly. Cut the red onion into 1-inch chunks, separating the layers slightly.
  4. Make the glaze: In a medium bowl, whisk together the olive oil, honey (or brown sugar), smoked paprika, garlic powder, and a pinch of salt and pepper. Taste it — it should be sweet with a hint of smoke and warmth. Adjust seasoning if needed.
  5. Toss and thread: Add the sausage pieces, pepper squares, and onion chunks to the bowl with the glaze. Toss everything gently with your hands until every piece is coated. Now thread them onto the skewers, alternating sausage, pepper, and onion. Leave about 1/2 inch of space between pieces — overcrowding prevents even cooking. Each skewer should have 4-5 pieces total.
  6. Grill the skewers: Place the skewers on the preheated grill. Cook for 4-5 minutes on the first side. You’ll know they’re ready to flip when you see nice grill marks and the edges of the peppers start to char slightly. Flip carefully using tongs and cook for another 4-5 minutes. The total cooking time is about 8-10 minutes.
  7. Check for doneness: The sausage should be heated through with crispy, caramelized edges. The peppers should be tender but still have a slight bite — not mushy. The onions should be soft and translucent with charred edges. If you’re unsure, cut into a piece of sausage — it should be steaming inside.
  8. Rest and serve: Remove the skewers from the grill and let them rest for 2-3 minutes. This allows the juices to redistribute and prevents burning your mouth on the first bite. Serve hot, straight off the grill.

Notes

If you’re making these for a crowd that includes picky eaters, set aside a few plain skewers without the glaze. The sausage and peppers are delicious on their own, and you can always add sauce on the side. For a spicier kick, use andouille sausage. For a vegetarian option, swap the smoked sausage for vegan smoked sausage or halloumi cheese. To prevent wooden skewers from burning, soak them in water for at least 20 minutes before grilling. If using metal skewers, no soaking needed.
