  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • ¾ cup whole milk
  • ½ cup beer (pale ale or lager recommended)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water (110°F-115°F), sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy and bubbly.
  2. Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour, one cup at a time, mixing until a shaggy dough forms.
  3. Turn dough out onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Dough should be soft and slightly tacky but not sticky.
  4. Place dough in a lightly greased bowl, turning once to coat. Cover with a clean kitchen towel and let rise in a warm, draft-free spot for about 1 hour, or until doubled in size.
  5. While dough rises, bring 10 cups of water and baking soda to a boil in a large pot. Reduce heat to a gentle simmer and keep warm.
  6. Preheat oven to 425°F (220°C). Punch down risen dough and turn out onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a long rope about ½ inch thick. Cut rope into 1-inch pieces (about 20-25 bites per rope).
  7. Working in batches of 8-10 pieces, drop pretzel bites into simmering baking soda water. Let cook for 30 seconds, then remove with a slotted spoon. Place on a parchment-lined baking sheet, spacing about an inch apart.
  8. In a small bowl, beat egg with 1 tablespoon water. Brush each pretzel bite with egg wash. Sprinkle generously with coarse sea salt or pretzel salt.
  9. Bake for 12-15 minutes, rotating pan halfway through, until deep golden brown. While baking, melt 3 tablespoons of butter for brushing.
  10. While pretzels bake, make the dip: In a small saucepan over medium heat, melt 2 tablespoons butter. Whisk in flour and cook for 1 minute. Slowly whisk in milk and beer, stirring constantly until mixture thickens, about 3-4 minutes. Reduce heat to low and add shredded cheddar, Dijon mustard, garlic powder, and paprika. Stir until smooth and fully melted. Season with salt and pepper to taste. Keep warm.
  11. As soon as pretzel bites come out of the oven, brush generously with melted butter. Let cool for 5 minutes, then serve warm with beer cheese dip.
