A creamy, spicy, and festive taco dip with a sour cream spiderweb design, perfect for Halloween parties. Layers of seasoned beef, refried beans, cream cheese, and melted cheese create an irresistible appetizer that looks as good as it tastes.

  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning (McCormick or homemade)
  • 1/3 cup water
  • 1 can (15 ounces) refried beans (Rosarita brand recommended)
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sour cream, divided
  • 1 cup shredded Mexican blend cheese (or cheddar jack)
  • 1 can (4 ounces) diced green chiles, drained
  • 1/2 cup sour cream (reserved for spiderweb)
  • 1 tablespoon milk (to thin sour cream for piping)
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 medium tomato, diced
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions (white and green parts)
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with nonstick cooking spray or rub with oil.
  2. Brown the ground beef in a large skillet over medium-high heat for 6-8 minutes, breaking it apart with a wooden spoon, until fully browned. Drain excess fat.
  3. Reduce heat to low. Sprinkle taco seasoning over beef and add 1/3 cup water. Stir and simmer for 2-3 minutes until liquid thickens and coats the meat. Remove from heat.
  4. In a medium bowl, beat softened cream cheese with a hand mixer until smooth and fluffy, about 1 minute. Add 1/2 cup sour cream (reserve remaining 1/2 cup for web) and beat until combined. Fold in drained green chiles.
  5. Spread refried beans evenly across the bottom of the prepared baking dish.
  6. Drop spoonfuls of cream cheese mixture over the beans and gently spread into an even layer, being careful not to mix into the beans.
  7. Sprinkle seasoned beef evenly over the cream cheese layer.
  8. Top with shredded Mexican blend cheese. Cover loosely with foil and bake for 15 minutes. Remove foil and bake for another 5-7 minutes until cheese is melted and bubbly along the edges.
  9. While dip bakes, prepare spiderweb mixture: In a small bowl, stir together reserved 1/2 cup sour cream and 1 tablespoon milk until smooth. Transfer to a piping bag or zip-top bag and snip off a tiny corner.
  10. Let dip cool for 2-3 minutes after baking. Pipe a small dot of sour cream in the center, then pipe concentric circles around it, spacing about an inch apart (3-4 circles). Using a toothpick, drag lines from the center outward through the circles to create the web effect, wiping the toothpick clean between each line.
  11. Sprinkle shredded lettuce, diced tomato, sliced olives, green onions, and cilantro around the edges of the dip, leaving the spiderweb center visible.
  12. Serve immediately with tortilla chips.

For best texture, ensure cream cheese is at room temperature to avoid lumps. Use full-fat sour cream for the spiderweb—it pipes more smoothly and holds its shape. Let dip rest 2-3 minutes before piping the web to prevent sour cream from melting. Can be assembled up to 24 hours in advance (without spiderweb and fresh toppings); add 5-10 minutes to baking time if starting from cold. Not recommended for freezing.
