Easy Sweet Canning Fresh Peaches Recipe for Perfect Homemade Joy

A simple and reliable method to preserve fresh peaches with a sweet syrup, capturing the fresh flavor and texture for enjoyment year-round.

  • 4 pounds fresh peaches (freestone varieties recommended)
  • 2 cups granulated sugar (can reduce to 1 ½ cups or substitute raw sugar)
  • 4 cups water
  • 2 tablespoons freshly squeezed lemon juice
  • Optional: vanilla bean or cinnamon stick

Instructions

  1. Wash jars, lids, and bands in warm soapy water. Rinse well. Place jars in canner or large pot filled with water and bring to a simmer (180°F / 82°C) to warm and sterilize. Keep lids in hot (not boiling) water to soften sealing compound.
  2. Bring a large pot of water to a boil. Score a small “X” at the base of each peach with a paring knife. Working in batches, blanch peaches in boiling water for 30–60 seconds until skins loosen, then plunge into ice water bath to cool.
  3. Peel skins off gently, cut peaches in half, and remove pits.
  4. Place peeled peaches into a large bowl of water with 2 tablespoons lemon juice to prevent browning. Keep submerged until ready to pack.
  5. Combine 2 cups sugar and 4 cups water in a saucepan. Heat over medium heat, stirring until sugar dissolves completely. Keep syrup hot but not boiling.
  6. Using a slotted spoon, pack peach halves into hot jars leaving 1/2-inch headspace. Pour hot syrup over peaches maintaining headspace. Remove air bubbles with a non-metallic spatula.
  7. Wipe jar rims with a clean, damp cloth. Place lids and screw bands on jars, tightening to fingertip tightness.
  8. Place jars in boiling water canner covered by at least 1 inch of water. Process pint jars for 20 minutes and quart jars for 25 minutes at a rolling boil.
  9. Remove jars with jar lifter and place on towel or cooling rack. Let cool undisturbed for 12–24 hours. Check seals; lids should not flex up and down. Store in a cool, dark place.

Notes

Score peaches before blanching for easier peeling. Keep syrup warm before pouring to prevent air pockets. Do not overfill jars; leave 1/2-inch headspace. Use a non-metallic spatula to remove air bubbles. Adjust sugar in syrup to taste. Process jars fully to avoid mushy fruit or spoilage.
