Quick and easy turkey and cheese pinwheel roll-ups made with cream cheese, deli turkey, and tortillas. Perfect for lunchboxes, these no-cook spirals take just 5 minutes to assemble and hold up beautifully without getting soggy.

  • 8 ounces cream cheese, softened to room temperature
  • 8 slices deli turkey breast (oven-roasted recommended)
  • 4 slices provolone or cheddar cheese
  • 1/2 cup finely shredded carrots (optional)
  • 1/4 cup finely chopped bell peppers (red or orange, optional)
  • 2 tablespoons fresh spinach leaves, finely chopped (optional)
  • 1 tablespoon ranch seasoning mix (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge 30 minutes before starting. In a rush, microwave it for 10 seconds at 50% power, checking and repeating if needed. Do not overheat.
  2. Mix the spread: In a small bowl, combine the softened cream cheese with ranch seasoning (if using), garlic powder, and a pinch of salt. Stir until smooth and completely combined. Taste and adjust seasoning.
  3. Prep your tortillas: Lay one tortilla flat on your cutting board. If edges are curling, microwave for 10 seconds to relax the gluten. Pat dry with a paper towel if there’s any moisture.
  4. Spread evenly: Using an offset spatula or butter knife, spread about 2 tablespoons of the cream cheese mixture over the entire tortilla, going edge to edge.
  5. Layer the turkey: Place 2 slices of turkey flat on the cream cheese, overlapping slightly to cover the whole surface. Trim any overhang with kitchen shears.
  6. Add the cheese: Lay 1 slice of cheese on top of the turkey, tearing into pieces if needed to cover evenly. Sprinkle optional veggies over the cheese.
  7. Roll tightly: Starting from the edge closest to you, roll the tortilla away from you, keeping it firm but not so tight that fillings squeeze out. Use fingers to tuck and guide.
  8. Wrap and chill: Place the rolled tortilla seam-side down on plastic wrap. Wrap tightly, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes (1 hour is better).
  9. Slice into pinwheels: After chilling, unwrap and place on a cutting board. Using a sharp knife, trim off the ragged ends (about 1/2 inch from each side). Slice the remaining roll into 1-inch pieces, using a gentle sawing motion.
  10. Arrange and pack: Place pinwheels in a lunchbox or container snugly to prevent shifting. Refrigerate until ready to serve. Holds for up to 3 days.

Room temperature cream cheese is essential for even spreading. Chilling the rolled tortillas for at least 30 minutes is non-negotiable for clean slices. Pat turkey dry to prevent sogginess. These taste even better the next day as flavors meld. Do not freeze. For gluten-free, use certified gluten-free tortillas. For dairy-free, use dairy-free cream cheese and cheese alternatives.
