  • 4 cups (600g) seedless watermelon, cubed and chilled
  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons (30ml) fresh lime juice

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into cubes and chill for at least an hour.
  2. Place the watermelon cubes in a blender or food processor and blend on high speed until completely smooth, about 1-2 minutes.
  3. Optional: Pour the puree through a fine mesh sieve into a bowl to remove pulp and seeds.
  4. Stir in ⅓ cup (65g) granulated sugar and 2 tablespoons (30ml) fresh lime juice until the sugar dissolves completely.
  5. Pour the mixture into a shallow freezer-safe container, cover tightly, and freeze for about 3-4 hours, stirring every 30 minutes to break up ice crystals.
  6. After the last stir, freeze solid for another 1-2 hours until firm but scoopable.
  7. Serve scooped into bowls or cones, garnished with fresh mint or lime zest if desired.

Notes

Chill watermelon cubes before blending for smoother texture. Stir sorbet every 30 minutes during freezing to prevent ice crystals. Let sorbet sit at room temperature 5-10 minutes before scooping if too hard. Fresh lime juice is preferred over bottled for best flavor.
