A refreshing and elegant non-alcoholic drink that balances tart pomegranate juice with earthy rosemary-honey syrup, finished with fizzy club soda. Perfect for holiday gatherings and family celebrations.

Ingredients

Scale
  • 1/2 cup water
  • 1/2 cup honey (mild honey like clover or orange blossom preferred)
  • 4–5 fresh rosemary sprigs, plus extra for garnish
  • 2 cups pomegranate juice (100% juice, not a blend)
  • 1 cup club soda or sparkling water, chilled
  • 1/2 cup fresh pomegranate arils (seeds) for garnish
  • Ice cubes
  • 1–2 tablespoons fresh lemon juice (optional, to balance sweetness)

Instructions

  1. Make the Rosemary-Honey Syrup: In a small saucepan, combine water and honey. Place over medium heat and stir gently until honey dissolves completely, about 2-3 minutes. Do not let it boil—a gentle simmer is all you need.
  2. Add rosemary sprigs to the saucepan, pressing them down with the back of a spoon. Reduce heat to low and simmer for 5 minutes.
  3. Turn off the heat and let the rosemary steep in the hot syrup for another 10 minutes to deepen the flavor without bitterness.
  4. Strain the syrup through a fine-mesh strainer into a glass measuring cup or bowl, pressing gently on the rosemary sprigs to extract all the flavor. Discard rosemary. Let syrup cool to room temperature (or refrigerate for 15 minutes to speed up).
  5. While syrup cools, ensure pomegranate juice and club soda are well-chilled.
  6. In a large pitcher, combine cooled rosemary-honey syrup and pomegranate juice. Stir well. Taste and adjust: add more honey if too tart, or lemon juice if too sweet. Aim for a flavor slightly stronger than desired final drink, as club soda will dilute it.
  7. Just before serving, pour in chilled club soda and stir gently but thoroughly to combine without losing carbonation.
  8. Fill serving glasses with ice cubes. Pour mocktail mixture over ice, filling each glass about three-quarters full.
  9. Garnish each glass with a small handful of fresh pomegranate arils. Slap a fresh rosemary sprig between your palms to release oils, then place it in the glass as a stirrer. For extra festivity, skewer a few arils on a toothpick and rest on the rim.
  10. Serve immediately, within 15 minutes of adding club soda for best fizz.

Notes

The rosemary-honey syrup can be made ahead and stored in a sealed jar in the refrigerator for up to 2 weeks. The base mixture (juice and syrup, without club soda) can be stored in the fridge for up to 3 days—flavors meld and deepen overnight. Do not add club soda until ready to serve to maintain fizz. For a lower-sugar version, use sugar-free pomegranate juice and reduce honey to 1 tablespoon. For a keto-friendly option, skip honey and use liquid stevia or monk fruit sweetener. If serving toddlers under 1 year, substitute agave for honey due to botulism risk.
