These star-shaped Rice Krispie treats dipped in red and blue chocolate are a quick, easy, and festive snack perfect for patriotic celebrations like the Fourth of July. They combine the nostalgic crunch of classic Rice Krispies with a smooth, colorful chocolate coating for a fun and crowd-pleasing treat.

  • 6 cups (about 150g) Rice Cereal (Kellogg’s Rice Krispies preferred)
  • 10 oz (about 280g) marshmallows, mini or regular
  • 4 tbsp (57g) unsalted butter, softened, plus extra for greasing pans
  • 1 tsp vanilla extract
  • 1 cup (about 175g) red melting chocolate or candy melts
  • 1 cup (about 175g) blue melting chocolate or candy melts
  • Optional: red, white, and blue star or nonpareil sprinkles

Instructions

  1. Lightly grease a 9×13-inch (23×33 cm) pan with butter or line it with parchment paper.
  2. In a large saucepan over low heat, melt 4 tbsp (57g) of unsalted butter. Add 10 oz (280g) marshmallows and stir constantly until fully melted and smooth, about 3-5 minutes. Remove from heat and stir in 1 tsp vanilla extract.
  3. Immediately add 6 cups (150g) of Rice Krispies cereal to the melted marshmallow mixture. Stir gently but thoroughly to coat every bit of cereal without crushing it.
  4. Press the sticky mixture evenly into the prepared pan using a buttered spatula or greased hands. Don’t press too hard to keep treats light and airy. Let cool completely, about 30 minutes.
  5. Once cooled and set, use a star-shaped cookie cutter (about 2.5 inches/6 cm) to cut out as many stars as possible. Remove excess around stars for snacking or recycling.
  6. Melt 1 cup (175g) of red melting chocolate and 1 cup (175g) of blue melting chocolate separately using double boilers or microwave-safe bowls. Microwave in 20-second bursts, stirring between each, until smooth and glossy.
  7. Dip each star by holding a corner or edge: dip half the star into red chocolate and the other half into blue, or alternate stars fully dipped in red or blue. Let excess drip off before placing on parchment paper or a cooling rack.
  8. While the chocolate is still wet, sprinkle red, white, and blue decorative sprinkles if desired.
  9. Allow the dipped treats to sit at room temperature until the chocolate is firm, about 30 minutes. For faster setting, refrigerate for 10-15 minutes.

Notes

Melt marshmallows slowly over low heat to avoid scorching. Grease spatula and hands to prevent sticking. Cut stars only after treats are fully set for clean edges. Temper chocolate if possible for a shiny, firm coating. Dip stars one at a time to avoid chocolate setting on the spatula. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
