Flavorful Bacon-Wrapped Grilled Corn with Spicy Honey Butter

A smoky, sweet, and spicy grilled corn recipe wrapped in crispy bacon and basted with a luscious spicy honey butter glaze. Perfect for summer barbecues and casual get-togethers.

  • 46 ears fresh corn on the cob, husked
  • 812 slices thin to medium bacon
  • 4 tablespoons (60g) unsalted butter, softened
  • 2 tablespoons (30ml) raw or clover honey
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 teaspoon fresh lime juice (optional)

Instructions

  1. Husk and clean the corn ears, removing all silk threads. Pat dry with a towel to help the bacon stick better. (5 minutes)
  2. Wrap each ear of corn with one slice of bacon at an angle, overlapping slightly to cover most of the kernels. Tuck the end under the corn to secure. Use half or a whole slice depending on corn size. Repeat for all ears. (10 minutes)
  3. In a small bowl, combine softened butter, honey, crushed chili flakes, smoked paprika, garlic powder, and a pinch of black pepper. Stir until smooth and evenly mixed. (5 minutes)
  4. Preheat grill to medium heat (about 350°F / 175°C). Lightly oil the grates to prevent sticking. (5 minutes)
  5. Place bacon-wrapped corn on the grill grates. Cook for 15-20 minutes, turning every 4-5 minutes with tongs to crisp all sides evenly. Watch for flare-ups and move corn to cooler side if needed. (20 minutes)
  6. During the last 5 minutes of grilling, brush the corn generously with the spicy honey butter on all sides. Repeat once or twice to build layers of flavor and glaze. (5 minutes)
  7. Remove corn from grill and let rest for 2-3 minutes. Optionally squeeze fresh lime juice over the top before serving. (3 minutes)

Notes

If bacon isn’t crisp enough before corn is cooked, finish under broiler for 1-2 minutes watching closely to avoid burning. Keep a spray bottle of water handy to control flare-ups. Soften butter ahead for smooth honey butter mixing. Multiple light coats of butter build better glaze than one thick layer. Let corn rest after grilling to allow flavors to settle.
