  • 1/4 cup (50g) light brown sugar
  • 3 tbsp (42g) unsalted butter, melted
  • 1/2 tsp ground cinnamon

Instructions

  1. Brown the butter: Melt the butter in a medium saucepan over medium heat, stirring constantly until it foams and turns golden brown with amber bits. Remove from heat and transfer to a heatproof bowl to cool for 5 minutes.
  2. Prepare the streusel topping: In a small bowl, mix chopped walnuts, brown sugar, melted butter, and cinnamon until crumbly. Set aside.
  3. Mix wet ingredients: In a large bowl, whisk together mashed bananas, browned butter (cooled), granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Combine dry ingredients: In a separate bowl, sift together flour, baking soda, ground cardamom, and salt.
  5. Fold dry into wet: Gradually add dry ingredients to wet mixture, folding gently with a spatula until just combined. Do not overmix.
  6. Pour batter into loaf pan: Scrape batter into a greased or parchment-lined 9×5-inch loaf pan. Smooth the top and sprinkle walnut streusel evenly over batter, pressing lightly to adhere.
  7. Bake: Place in a preheated 350°F (175°C) oven and bake for 55-60 minutes until streusel is golden and a toothpick inserted in the center comes out with a few moist crumbs. If top browns too quickly, cover loosely with foil halfway through baking.
