Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out the seeds and membranes. Remove all membranes for less heat or leave some for a subtle kick.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, smoked paprika, chopped chives, salt, and pepper. Mix until smooth and creamy.
  4. Fill each jalapeño half generously with the cream cheese mixture using a small spoon or piping bag.
  5. Cut bacon slices in half if needed to fit. Wrap each filled jalapeño half snugly with one slice of bacon, securing with a toothpick if necessary.
  6. Place the bacon-wrapped poppers seam side down on a parchment-lined baking sheet, spacing about 1 inch apart.
  7. Bake for 20-25 minutes until bacon is crisp and jalapeños are tender but hold their shape. Broil for 1-2 minutes at the end if extra crispness is desired, watching closely.
