Instructions

  1. Prepare the Zesty Jalapeño Relish: In a medium bowl, combine finely chopped jalapeños, diced red onion, and chopped cilantro. Add lime juice, apple cider vinegar, sugar, and a pinch of salt. Stir well and let sit for at least 10 minutes to marry flavors. For less heat, rinse jalapeños under cold water before mixing.
  2. Make the Firecracker Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and smoked paprika. Taste and adjust heat by adding more sriracha if desired. Set aside.
  3. Grill the Hot Dogs: Preheat grill or grill pan to medium-high heat. Grill hot dogs for 5-7 minutes, turning occasionally until grill marks appear and hot dogs are heated through with slight char.
  4. Toast the Buns: Lightly toast hot dog buns on the grill for 1-2 minutes until golden and slightly crisp.
  5. Assemble the Firecracker Hot Dogs: Spread a generous layer of firecracker sauce inside each bun. Place grilled hot dog in the bun, then top with a spoonful of zesty jalapeño relish. Add optional toppings if desired.

Notes

For less heat, remove jalapeño seeds or rinse chopped jalapeños before mixing. Toast buns to prevent sogginess. Adjust firecracker sauce spiciness by varying sriracha and honey. Relish and sauce can be made ahead and refrigerated. Use gloves when chopping jalapeños if sensitive to heat. If no grill available, pan-fry or oven-bake hot dogs.
