  • Flour for dusting (all-purpose or bread flour)
  • 68 fresh figs, sliced thin (look for ripe but firm figs)
  • 4 oz (115 g) prosciutto, thinly sliced
  • 1 cup (100 g) shredded mozzarella cheese
  • 1/2 cup (120 g) ricotta cheese
  • Fresh arugula (optional, for topping after baking)
  • Extra virgin olive oil for drizzling
  • Freshly cracked black pepper to taste
  • Sea salt to taste
  • 1/2 cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar

Instructions

  1. Preheat your oven and prepare the pizza stone: Place your pizza stone or steel on the middle rack and preheat the oven to 500°F (260°C). Let it heat for at least 30 minutes.
  2. Make the balsamic glaze: In a small saucepan, combine 1/2 cup balsamic vinegar and 1 tablespoon honey or brown sugar. Simmer over medium-low heat, stirring occasionally, until thickened to a syrupy consistency, about 10-12 minutes. Remove from heat and cool.
  3. Prepare the dough: On a floured surface, stretch or roll out the pizza dough into a roughly 12-inch circle. Transfer to a floured pizza peel or baking sheet.
  4. Assemble the pizza: Lightly brush the dough with olive oil, especially around the edges. Spread dollops of ricotta cheese evenly but sparingly. Sprinkle shredded mozzarella evenly over the dough, leaving a border for the crust.
  5. Add the toppings: Arrange sliced fresh figs on top of the cheese layers. Tear or lay slices of prosciutto over the figs. Lightly season with cracked black pepper and a pinch of sea salt.
  6. Bake the pizza: Slide the pizza onto the hot pizza stone or baking steel. Bake for 8-12 minutes until the crust is golden and crisp and the cheese is bubbly and just starting to brown.
  7. Finish and serve: Remove the pizza from the oven and immediately drizzle with the cooled balsamic glaze. Top with fresh arugula if desired. Slice and serve warm.

Notes

Add figs halfway through baking if they seem too soft to avoid mushiness. Let balsamic glaze cool fully before drizzling to prevent it from running off. Use a pizza stone or preheated heavy baking sheet for best crust. Reheat leftovers in a hot oven or skillet to maintain crispness.
