  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple chunks
  • 1/4 cup (60 ml) low sodium soy sauce
  • 2 tablespoons packed brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 stalks green onions, sliced thin (optional)
  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Cut chicken breasts into 1-inch cubes and pineapple into chunks of similar size.
  2. In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, grated ginger, minced garlic, and sesame oil until sugar dissolves.
  3. Add chicken cubes to the marinade, toss gently to coat, cover and refrigerate for 20 minutes to 2 hours.
  4. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  5. Thread chicken and pineapple chunks alternately onto skewers, leaving space between pieces.
  6. Preheat grill to medium-high heat (about 400°F / 200°C) and lightly oil the grates.
  7. Grill skewers for 10-12 minutes, turning every 3-4 minutes and basting with leftover marinade to build a sticky glaze.
  8. Chicken is done when internal temperature reaches 165°F (74°C) and pineapple is caramelized with grill marks.
  9. Remove skewers from grill and let rest for 5 minutes.
  10. Sprinkle with sliced green onions before serving.

Notes

Do not marinate chicken longer than 2 hours to avoid mushy texture. Soak wooden skewers for at least 30 minutes to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F. Baste frequently with marinade during grilling for a sticky glaze. Adjust grill heat to avoid burning sugars in the marinade.
