Flavorful Honey Mustard Glazed Grilled Chicken Thighs

Juicy, crispy grilled chicken thighs glazed with a sticky, sweet, and tangy honey mustard sauce, perfect for summer gatherings and quick dinners.

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 grams)
  • ¼ cup (85 grams) honey (wildflower or clover honey preferred)
  • 3 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, minced garlic, smoked paprika, apple cider vinegar, olive oil, salt, and pepper to prepare the glaze.
  2. Reserve half of the glaze for basting during grilling.
  3. Marinate the chicken thighs in the remaining glaze for at least 15 minutes, preferably up to 30 minutes for more flavor.
  4. Preheat the grill (gas or charcoal) to medium-high heat.
  5. Place the chicken thighs skin-side down on the grill and cook for about 6-8 minutes until the skin is crispy and has grill marks.
  6. Flip the chicken thighs and brush generously with the reserved glaze.
  7. Continue grilling for another 6-8 minutes, basting with glaze once or twice more, until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the grill and let rest on a plate or tray for 5 minutes before serving.

Notes

If you don’t have apple cider vinegar, white wine vinegar can be used as a substitute. Check mustard labels for gluten content if gluten-free is required. A grill pan can be used as an alternative to an outdoor grill but may lack smoky flavor.
