  • 3 tablespoons unsalted butter, melted and slightly cooled

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
  2. In a separate bowl, beat the egg lightly. Add the buttermilk, melted butter, and vanilla extract if using. Stir until just combined.
  3. Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula or wooden spoon until just combined; batter should be thick but pourable with some lumps.
  4. Preheat a skillet or griddle over medium heat. Test heat by sprinkling a few drops of water; they should sizzle and evaporate quickly. Lightly grease with butter or oil.
  5. Pour 1/4 cup batter onto the hot pan for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip carefully and cook the other side until golden brown, about 1-2 minutes more. Repeat with remaining batter.

Notes
