A fresh, vibrant, and easy-to-make dip combining black beans, fresh veggies, and a zesty honey lime dressing. Perfect for summer parties, casual get-togethers, or last-minute snacks.

  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 can (15 oz / 425 g) black-eyed peas, drained and rinsed (optional)
  • 1 cup (150 g) fresh corn kernels (frozen works fine)
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/2 cup (75 g) diced red bell pepper
  • 1/4 cup (40 g) finely chopped red onion
  • 1/4 cup (15 g) fresh cilantro, chopped
  • 3 tablespoons fresh lime juice (about 1 large lime)
  • 2 tablespoons honey
  • 1/4 cup (60 ml) olive oil (extra virgin)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse and drain the black beans and black-eyed peas thoroughly using a colander to remove excess sodium and canned flavor.
  2. Halve the cherry tomatoes, dice the red bell pepper into small even pieces, finely chop the red onion, and roughly chop the cilantro.
  3. In a medium bowl, combine the drained beans, corn kernels, tomatoes, bell pepper, red onion, and cilantro. Toss gently to mix evenly.
  4. In a small bowl, whisk together fresh lime juice, honey, olive oil, ground cumin, chili powder (if using), salt, and black pepper until the honey dissolves and the dressing emulsifies.
  5. Pour the dressing over the bean and veggie mixture and toss gently until everything is coated.
  6. Let the dip sit at room temperature for at least 15 minutes to allow flavors to meld. For best results, chill for a few hours or overnight.
  7. Before serving, taste and adjust seasoning with additional salt, pepper, or lime juice as desired.

Rinse canned beans well to remove excess sodium and canned flavor. Let the dip rest for at least 15 minutes or chill overnight for best flavor. Adjust honey and lime juice balance gradually. Add diced avocado just before serving to prevent browning. Can substitute honey with maple syrup or agave nectar for vegan option.
