A quick and easy fresh creamy cucumber dill salad that combines crisp cucumber ribbons with tangy sour cream and fresh dill, perfect as a light and refreshing side dish.

Ingredients

Scale
  • 2 large English cucumbers, thinly sliced
  • ½ cup (120 ml) full-fat sour cream
  • 2 tablespoons fresh dill, finely chopped
  • ¼ teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: pinch of sugar to balance acidity

Instructions

  1. Slice the cucumbers thinly using a sharp knife or mandoline into about ⅛ inch (3 mm) thick rounds or ribbons. Pat dry with paper towels or use a salad spinner to remove excess moisture.
  2. In a medium mixing bowl, whisk together sour cream, lemon juice, garlic powder, salt, and black pepper until smooth and creamy. Adjust seasoning and add a pinch of sugar if needed.
  3. Stir in the finely chopped fresh dill until evenly distributed.
  4. Add the sliced cucumbers to the bowl and gently fold them into the dressing until all slices are evenly coated. Avoid over-mixing to keep cucumbers crisp.
  5. Optionally chill the salad in the fridge for 10-15 minutes to let flavors meld, or serve immediately.
  6. If the salad becomes watery after resting, drain off any excess liquid before serving.

Notes

Dry cucumbers thoroughly to prevent watery salad. Use fresh dill for best flavor. Can substitute sour cream with Greek yogurt or dairy-free alternatives like coconut yogurt or cashew cream. Fold dressing gently to avoid bruising cucumbers. Salad holds well in fridge up to 2 days; drain excess liquid before serving.
