A light, refreshing salad combining crisp cucumber, juicy tomatoes, tangy feta, and fragrant fresh dill. Perfect for hot summer days or as a simple, healthy side dish.

  • 2 medium cucumbers, peeled and diced (preferably English cucumbers)
  • 3 large ripe tomatoes, chopped (Roma or vine-ripened)
  • 6 ounces (about 170 grams) crumbled feta cheese
  • 3 tablespoons fresh dill, finely chopped
  • 1 small red onion, thinly sliced (optional)
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 small clove garlic, minced (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prep the Vegetables (10 minutes): Peel cucumbers if needed and dice into ½-inch cubes. Chop tomatoes to similar size. Thinly slice red onion if using. Finely chop fresh dill.
  2. Make the Dressing (3 minutes): Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl or jar. Adjust salt carefully due to feta’s saltiness.
  3. Toss the Salad (2 minutes): Combine cucumbers, tomatoes, red onion, and dill in a mixing bowl. Pour dressing over and toss gently to coat without mashing tomatoes.
  4. Add the Feta Last (1 minute): Crumble feta over the salad and fold in gently to keep feta chunky.
  5. Rest Briefly (Optional): Let salad sit at room temperature for 5–10 minutes to meld flavors. Drain excess liquid if needed before serving.

Notes

Use English or Persian cucumbers for best texture and less bitterness. Salt and drain cucumbers before mixing to reduce excess water. Add dill last or just before serving for freshest flavor. Keep dressing separate if making ahead and add feta just before serving. Optional additions include toasted nuts for crunch or swapping feta for tofu for a dairy-free version.
