A refreshing summer salad featuring crisp cucumbers, juicy tomatoes, fresh dill, and creamy feta cheese, tossed in a tangy lemon-olive oil dressing. Perfect as a light side dish or accompaniment to grilled meats.

  • 2 medium English cucumbers (about 12 oz / 340 g each), thinly sliced
  • 1 pint (300 g) cherry or grape tomatoes, halved (or plum tomatoes diced)
  • 1/2 small red onion (about 2 oz / 60 g), thinly sliced (optional)
  • 4 oz (115 g) creamy feta cheese, crumbled by hand
  • 2 tablespoons (about 8 g) fresh dill, finely chopped
  • 3 tablespoons (45 ml) extra virgin olive oil
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash and dry the cucumbers. Slice them thinly, about 1/8 inch (3 mm) thick. Keep the skin on for extra texture if desired. Transfer to a large mixing bowl.
  2. Halve the cherry or grape tomatoes. If using plum tomatoes, chop into bite-sized chunks. Add to the bowl with cucumbers.
  3. Thinly slice half a small red onion. Soak the slices in cold water for 10 minutes to tame sharpness, then drain and add to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Taste and adjust seasoning if needed.
  5. Pour the dressing over the cucumber, tomato, and onion mixture. Gently toss to coat without bruising the ingredients.
  6. Crumble the feta cheese by hand over the salad, then sprinkle with fresh chopped dill.
  7. Gently toss or stir the feta and dill in to keep some chunky bits intact.
  8. Let the salad sit at room temperature for about 10 minutes before serving to let flavors marry, or serve immediately.

Notes

Use block-style Greek feta for best texture and flavor. Soak red onion slices in cold water to reduce sharpness. Handle ingredients gently to maintain crispness and avoid mushiness. Store dressing separately if making ahead to keep salad fresh.
