A quick and easy fall salad featuring massaged curly kale, crisp Honeycrisp apples, toasted pecans, and dried cranberries tossed in a tangy lemon-Dijon dressing. Perfect for weeknights, potlucks, or holiday gatherings.

Ingredients

Scale
  • 1 large bunch curly kale (about 810 ounces, stems removed and leaves chopped)
  • 2 medium Honeycrisp apples (or any crisp, sweet apple; thinly sliced or diced)
  • 1 cup pecans (raw or toasted; roughly chopped)
  • 1/3 cup dried cranberries (or dried cherries for a deeper flavor)
  • 1/4 cup shaved Parmesan cheese (optional but adds a salty, nutty note)
  • 1/4 cup extra virgin olive oil (use a good quality one—it matters here)
  • 2 tablespoons fresh lemon juice (from about 1 lemon)
  • 1 tablespoon apple cider vinegar (adds brightness)
  • 1 teaspoon Dijon mustard (helps emulsify the dressing)
  • 1 small shallot (finely minced; about 1 tablespoon)
  • 1/2 teaspoon salt (plus more for massaging kale)
  • 1/4 teaspoon black pepper
  • 1 tablespoon maple syrup or honey (optional, for a touch of sweetness)

Instructions

  1. Prepare the kale: Wash the kale thoroughly and dry it completely using a salad spinner or clean towel. Remove the tough stems by holding the stem with one hand and stripping the leaves off with the other. Chop the leaves into bite-sized pieces (about 1-inch squares).
  2. Massage the kale: Place the chopped kale in a large bowl. Add a pinch of salt (about 1/4 teaspoon) and 1 tablespoon of the olive oil. Using your hands, massage the kale for 2-3 minutes, squeezing and rubbing the leaves together. You’ll notice the color deepen and the leaves become softer and more tender. This step is crucial—it breaks down the tough fibers and makes the kale much more enjoyable to eat.
  3. Make the dressing: In a small bowl or jar, combine the remaining olive oil, lemon juice, apple cider vinegar, Dijon mustard, minced shallot, salt, pepper, and maple syrup (if using). Whisk until well combined, or shake vigorously in a jar. Taste and adjust seasoning—you want it tangy but balanced.
  4. Toast the pecans: While the kale rests, heat a dry skillet over medium heat. Add the pecans and toast for 3-4 minutes, stirring frequently, until they’re fragrant and slightly darkened. Watch carefully—they burn quickly. Remove from heat and let cool.
  5. Prep the apples: Core the apples and slice them thinly (about 1/4-inch thick) or dice them into bite-sized pieces. If you’re not serving immediately, toss them with a little lemon juice to prevent browning.
  6. Assemble the salad: Pour the dressing over the massaged kale and toss well to coat. Add the sliced apples, toasted pecans, dried cranberries, and shaved Parmesan. Toss gently to combine without crushing the apples.
  7. Let it rest: Let the salad sit for 5-10 minutes before serving. This allows the flavors to meld and the kale to soften a bit more. The salad actually gets better as it sits—perfect for making ahead.
  8. Serve: Transfer to a serving platter or individual bowls. Garnish with extra pecans or Parmesan if desired. Enjoy immediately or refrigerate for later.

Notes

Massaging the kale is essential for tenderness. For meal prep, keep apples and dressing separate until serving to maintain crunch. The salad improves after resting for 10-15 minutes. Can be made dairy-free by omitting Parmesan or using nutritional yeast.
