  • 4 oz (115 g) cream cheese, softened (plain or herb-flavored)
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste
  • 1 small red bell pepper, sliced into strips
  • 1 small yellow bell pepper, sliced into strips
  • 1 medium cucumber, sliced into rounds or sticks
  • 1 large carrot, peeled and cut into sticks
  • 1 cup cherry tomatoes, halved
  • 1 handful snap peas or green beans, trimmed
  • ½ cup (120 g) store-bought or homemade hummus
  • 1 teaspoon lemon juice
  • ½ teaspoon smoked paprika (optional)
  • Fresh parsley or dill sprigs for garnish
  • Whole grain crackers or pita chips (optional)

Instructions

  1. In a small mixing bowl, combine softened cream cheese with finely chopped chives, Dijon mustard (if using), salt, and pepper. Stir until smooth and creamy.
  2. Lay out turkey slices flat on a cutting board. Spread a thin, even layer of the cream cheese mixture over each slice.
  3. Roll each turkey slice tightly from one edge to the other, creating a neat cylinder. Wrap each roll in plastic wrap and chill for 10 minutes.
  4. Unwrap the turkey rolls and slice each into 1-inch thick pinwheels. Arrange them neatly in your bento box.
  5. Wash and dry all fresh vegetables thoroughly. Slice bell peppers into thin strips, carrots into sticks, cucumbers into rounds or sticks, halve cherry tomatoes, and trim snap peas or green beans.
  6. Arrange each vegetable in its own section or compartment for a colorful, rainbow effect.
  7. In a small bowl, stir together hummus with lemon juice and smoked paprika. Transfer to a small container or dip bowl and place in the bento box.
  8. Garnish the bento box with fresh parsley or dill sprigs. Add whole grain crackers or pita chips if desired.
  9. Close the box securely and keep refrigerated until ready to eat.

Notes

Let cream cheese come to room temperature before mixing for easier spreading. Roll turkey slices tightly but gently to avoid filling squeezing out. Use a sharp serrated knife to slice pinwheels cleanly. Prepare pinwheels ahead of time and chill to make slicing easier. Store cut veggies separately in water or wrapped in damp paper towel to keep crisp. Hummus can be flavored with lemon juice and smoked paprika for extra taste. For dairy-free pinwheels, substitute cream cheese with mashed avocado or cashew spread.
