A quick and refreshing summer salad combining sweet watermelon, creamy feta, fresh mint, and a zesty lime dressing for a perfect cool-down dish.

  • 4 cups seedless watermelon, cut into bite-sized cubes (about 600g)
  • 6 ounces feta cheese, crumbled (about 170g)
  • 1/3 cup fresh mint leaves, roughly chopped (about 15g)
  • 3 tablespoons fresh lime juice (from 2 medium limes, about 45ml)
  • Lime zest from 1 lime
  • 2 tablespoons extra virgin olive oil (about 30ml)
  • 1 teaspoon honey (about 5ml)
  • 1/4 teaspoon salt (about 1.5g)
  • Freshly ground black pepper to taste

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes, aiming for uniform pieces.
  2. Crumble feta cheese gently with fingers or fork into delicate, fluffy bits.
  3. Rinse and pat dry fresh mint leaves, then stack, roll tightly, and slice thinly (chiffonade).
  4. In a small bowl or jar, whisk together lime juice, lime zest, olive oil, honey, salt, and black pepper until smooth.
  5. In a medium bowl, combine watermelon cubes, crumbled feta, and chopped mint.
  6. Drizzle the lime dressing over the salad and gently toss to coat evenly without bruising the watermelon or breaking up the feta too much.
  7. Taste and adjust seasoning with extra salt or lime juice if needed.
  8. Serve immediately or chill for 10-15 minutes before serving.

Notes

Do not dress the salad too early to avoid watery texture. Toss just before serving. For vegan option, substitute feta with marinated tofu or plant-based cheese. Fresh mint is preferred but basil can be used as a substitute. Add cucumber or red onion for extra crunch if desired.
