Instructions

  1. Wash the watermelon thoroughly. Slice off both ends to create stable flat surfaces.
  2. Cut a round slice about 1 to 1.5 inches thick to serve as the pizza crust. Trim rind if desired, leaving some rind for easier handling.
  3. In a medium bowl, combine Greek yogurt with honey or maple syrup if using. Stir until smooth and creamy.
  4. Spread the yogurt mixture evenly over the top surface of the watermelon slice, about 1/4 inch thick, avoiding edges to prevent dripping.
  5. Rinse and dry chosen fruits. Hull and slice strawberries, peel and slice kiwi, cut mango or peaches into chunks or thin slices.
  6. Arrange the fruit toppings artistically over the yogurt layer. Add fresh mint leaves for freshness.
  7. Sprinkle toasted coconut flakes or chopped nuts evenly over the fruit if using.
