  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo hot sauce (like Frank’s RedHot)
  • 1 cup shredded cheddar cheese
  • Optional: chopped green onions, crumbled blue cheese, or extra hot sauce for garnish

Instructions

  1. Shred the chicken using a hand mixer on low speed or two forks until uniform.
  2. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes or microwaving in 10-second bursts.
  3. Combine shredded chicken, softened cream cheese, ranch dressing, buffalo hot sauce, and half of the shredded cheddar in the slow cooker. Stir until mostly incorporated.
  4. Cook on low for 2 hours, stirring once halfway through.
  5. Sprinkle remaining cheddar on top, cover, and cook for another 10-15 minutes until melted.
  6. Garnish with green onions or blue cheese if desired. Serve warm from the slow cooker with tortilla chips, celery, or bread.

Notes

For best results, use full-fat cream cheese and shred your own cheddar. If dip is too thick, stir in a tablespoon of milk or chicken broth. If too thin, cook uncovered for 15-20 minutes. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
