  • ¾ cup (about 100 g) mixed fresh berries (blueberries, sliced strawberries, raspberries)
  • 2 tablespoons (about 15 g) raw almonds or walnuts, roughly chopped
  • 1 teaspoon (5 ml) honey or maple syrup (optional)
  • ¼ teaspoon (1 ml) vanilla extract (optional)
  • 1 teaspoon (5 g) chia seeds (optional)
  • A few fresh mint leaves for garnish

Instructions

  1. In a medium bowl, combine 1 cup (225 g) of small-curd cottage cheese with ¼ teaspoon (1 ml) vanilla extract and 1 teaspoon (5 ml) honey or maple syrup if using. Stir gently until blended but do not overmix to maintain texture (about 2-3 minutes).
  2. Rinse ¾ cup (100 g) mixed berries under cold water and pat dry. Slice strawberries into quarters or halves depending on size (2-3 minutes).
  3. Roughly chop 2 tablespoons (15 g) of raw almonds or walnuts. Toast lightly in a dry pan over medium heat for 2 minutes if desired, then cool (optional).
  4. Place the cottage cheese mixture into the largest compartment of your lunchbox or container. In separate sections, add the berries and chopped nuts. Sprinkle 1 teaspoon (5 g) chia seeds over the cottage cheese if using (5 minutes).
  5. Add a few fresh mint leaves on top of the berries or cottage cheese for color and freshness.
  6. Seal the container and refrigerate until ready to eat. This snack holds well for about 6-8 hours.

Notes

Use small-curd cottage cheese for best texture. Keep berries dry to avoid watering down the cottage cheese. Toast nuts lightly for extra flavor but avoid burning. Mix sweetener and vanilla gently to maintain texture. Pack moist and crunchy ingredients separately until just before eating to keep texture fresh. Store leftovers in an airtight container in the refrigerator for up to 24 hours. Reheating is not recommended.
