  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk of choice (whole milk recommended)
  • ½ cup (120g) plain Greek yogurt (full-fat or 2%)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 12 tablespoons (15-30ml) honey or maple syrup
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 banana, sliced (for topping, optional)
  • Optional add-ins: 1 scoop vanilla or chocolate protein powder, 1 tablespoon cocoa powder, or a handful of dark chocolate chips

Instructions

  1. In a medium bowl or large liquid measuring cup, whisk together milk, Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt until the peanut butter is mostly incorporated.
  2. Stir in chia seeds and rolled oats until evenly combined. The mixture will look loose and liquidy.
  3. Divide the mixture evenly into 2-3 mason jars or airtight containers, leaving about an inch of headspace.
  4. Optional: Drop a small spoonful of peanut butter on top of each jar and gently swirl it in with a knife or spoon.
  5. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, or other desired toppings.
  7. Enjoy cold or microwave for 30-45 seconds if you prefer warm oats.

Notes

Do not use quick oats; they turn gluey. For best texture, use rolled oats. If oats are too thick in the morning, stir in a splash of milk. For a vegan version, use plant-based yogurt and maple syrup. For gluten-free, ensure oats are certified gluten-free. The oats taste better on days 2 and 3 as flavors meld.
