Ingredients

Scale
  • 2 pounds chicken drumettes, skin-on
  • 1/4 cup honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • Salt and freshly ground black pepper, to taste
  • Optional: chili flakes for extra heat
  • 3 cups green cabbage, thinly sliced
  • 1 cup carrots, julienned or shredded
  • 1/2 cup red bell pepper, thinly sliced
  • 2 stalks green onions, sliced
  • 2 tablespoons toasted sesame seeds (black and white mix)
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

  1. Pat the chicken drumettes dry with paper towels and season lightly with salt and pepper.
  2. In a mixing bowl, whisk together honey, sriracha, soy sauce, minced garlic, rice vinegar, and toasted sesame oil until smooth. Adjust sriracha to taste.
  3. Toss the drumettes in the honey sriracha marinade, ensuring each piece is well coated. Marinate for at least 20 minutes at room temperature or up to 2 hours in the fridge.
  4. Preheat oven to 425°F (220°C).
  5. Arrange drumettes skin side up on a rimmed baking sheet, spacing them apart. Pour any leftover marinade over the drumettes.
  6. Roast for 25-30 minutes, flipping halfway through, until golden and caramelized. Check at 20 minutes if oven runs hot to avoid burning.
  7. While chicken roasts, combine cabbage, carrots, red bell pepper, and green onions in a large bowl.
  8. In a smaller bowl, whisk together sesame oil, rice vinegar, honey, salt, and pepper. Toss dressing with veggies and sprinkle toasted sesame seeds on top just before serving.
  9. Check chicken doneness by ensuring internal temperature reaches 165°F (74°C) or juices run clear.
  10. Serve drumettes hot with a generous helping of crisp sesame slaw on the side.

Notes

Pat chicken dry before marinating to ensure crispiness. Roast at high heat (425°F) to caramelize glaze and render fat. Avoid overcrowding pan to prevent steaming. Marinate at least 20 minutes but no longer than 2 hours to avoid skin breakdown. Broil last 2-3 minutes for extra crispiness. Toast sesame seeds before adding to slaw for best flavor. Store slaw separately from chicken to prevent sogginess. Reheat drumettes in oven at 375°F for 10 minutes to restore crispiness.
